Configuring payment terms

“Payment term is a set of conditions required for the sale to be completed, e.g. the period that is allowed to a buyer to pay off the amount due. Payment terms may also include cash in advance requirement, cash collection on delivery, a deferred payment period of 10/20/30 days, etc.”

I’ve checked available variables in payment rules and seems order details are not accessible there.

In this case you can decorate BasicPaymentContextToRulesValueConverter by implementing PaymentContextToRulesValueConverterInterface to add sourceEntity from PaymentContextInterface.
Source entity could be an Order or Checkout, both entities use \Oro\Bundle\EntityBundle\EntityProperty\DatesAwareTrait trait, so you can access createdAt and updatedAt field to use them for comparison.
See how other fields added to payment rules at BasicPaymentContextToRulesValueConverter.
Then you can compare above dates and now in order to find a difference in days.
