I am trying to replace the DataGridThemeHelper class in the way I step on the drivers but it does not work.

You can override class just by overriding in application config.yml or bundles services.yml parameter

PHP

parameters: oro_product.datagrid_theme_helper.class: 'AppBundle\DataGrid\DataGridThemeHelper'

1 2	parameters:     oro_product.datagrid_theme_helper.class: 'AppBundle\DataGrid\DataGridThemeHelper'

make sure that this parameter configuration was successfully loaded.
